1 small onion, diced

2 cloves garlic, minced

1 bell pepper, thinly sliced (use any color you prefer)

1 zucchini, sliced into half-moons

1 cup cauliflower florets

1 cup broccoli florets

1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)

Salt and pepper to taste

1/2 cup shredded mozzarella cheese (optional)
