Keto Lemon-Blueberry Bread Recipe

Ingredients:

 

1 cup blanched almond flour
1 cup all-purpose almond flour
1 Tbsp ground flaxseed
1/4 cup sweetener of your choice
1/2 tsp salt
1/3 cup unsweetened flaked coconut
1 tsp baking soda
6 tbsp olive oil
Four eggs (room temperature)
1 cup minced lemon peel (Usually from one lemon)
1 cup frozen, fresh, or dehydrated blueberries
3 tbsp organic apple cider vinegar
1/2 cup coconut or almond milk
1 tbsp psyllium husk powder

 


Instructions:


Preheat your oven to 350°F (175°C). Grease or line a standard-sized loaf pan with parchment paper.

Combine the blanched almond flour, all-purpose almond flour, ground flaxseed, salt, unsweetened flaked coconut, psyllium husk powder, sweetener, and baking soda in a large mixing bowl.

Whisk together the olive oil, eggs, minced lemon peel, apple cider vinegar, and coconut or almond milk in a separate bowl.

Combine the wet and dry ingredients, stirring until well blended.

Gently fold in your choice of fresh, frozen, or dehydrated blueberries.

Pour the batter into the prepared loaf pan, spreading it evenly.

Bake for approximately 45-55 minutes or until a toothpick inserted into the center comes clean.

Allow the bread to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
