Smoked Salmon with Homemade Tartar Sauce

Ingredients:
2 salmon fillets (about 6-8 ounces each)
Two tablespoons olive oil
Two tablespoons lemon juice
Two cloves garlic, minced
One teaspoon liquid smoke
Salt and pepper to taste
Lemon wedges for serving
Fresh dill or parsley, for garnish (optional)
Tartar Sauce Ingredients:
1 cup mayonnaise
2 tablespoons sweet pickle relish
1 tablespoon minced onion
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon capers, drained and chopped (optional)
1/2 teaspoon garlic granules
1/2 teaspoon onion granules
2 tablespoons sour cream
1 tablespoon fresh dill weed, chopped
Salt and pepper to taste
Dash of hot sauce (optional)
Instructions:
Preheat your oven to 375°F (190°C).
Mix the olive oil, lemon juice, minced garlic, liquid smoke, salt, and pepper in a small bowl to create a marinade.
Pour the marinade over the salmon, ensuring they are evenly coated. Let them marinate for about 10-15 minutes.
Carefully place the seasoned salmon fillets onto a preheated and oiled grill pan. Ensure that there's enough space between each fillet to allow for even cooking and grill marks to form.

Bake the salmon in the preheated oven for 12-15 minutes or until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
While the salmon is baking, prepare the tartar sauce. In a mixing bowl, combine the mayonnaise, sweet pickle relish, minced onion, lemon juice, Dijon mustard, chopped capers, garlic granules, onion granules, sour cream, and chopped fresh dill weed. Mix well and season with salt, pepper, and hot sauce to taste.
Once the salmon is done, please remove it from the oven and let it cool slightly. Garnish with fresh dill or parsley and serve with lemon wedges and the homemade tartar sauce.
