Keto Skillet Chicken Pot Pie

Ingredients:

Two tablespoons of olive oil
One small onion, diced
Two cloves garlic, minced

1/4 cup coconut oil or ghee, melted
One large egg

 

Instructions:

 

Preheat your oven to 375°F (190°C).


In a large oven-safe skillet, heat olive oil over medium heat. Add diced onions and garlic, and sauté until softened.


Add shredded chicken, mushrooms, green beans, spinach, and peas to the skillet. Cook until the vegetables are slightly tender.


Mix almond milk or coconut milk, chicken broth, dried thyme, salt, and pepper in a bowl. Pour the mixture into the skillet and stir well.


In another bowl, prepare the crust by mixing almond flour, coconut flour, baking powder, garlic powder, salt, melted coconut oil or ghee, and egg. Mix until a dough forms.


Pour the crust mixture onto parchment paper and cover the crust dough with another spread of parchment paper. Next, roll a rolling pin over the crust between the pieces of parchment paper. Remove the crust dough from the parchment paper and put it on top of the filling of the chicken pot pie.


Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the crust is golden brown.


Remove from the oven and let it cool for a few minutes before serving.
